Celebrity Dining: Rosedale Takes Another Stab at a Food Hall, This Time With Local Talent in the Stalls

After misstepping its first run at doing away with a food court way of dining, Roseville’s revamped mall is re-opening its two-story dining hub with a handful of familiar Twin Cities names. Now called Potluck this food stand collective leans heavily into the Minneapolis restauranteur talent with Top Chef’s Justin Sutherland, Smack Shack’s Josh Thoma, ice cream icon Grand Ol’ Creamery, State Fair darlings Nordic Waffles, and popular media personality Jason Matheson.

The new restaurant roster includes a lobster roll serving Smack Shack outlet as well as Thoma’s collaboration with chef Nick O’Leary Burger Dive. Perhaps the most prolific restaurant opener of 2019, Justin Sutherland will head O Bachan Noodles, named in honor of his Japanese grandmother, serving handmade noodles and fried chicken. Sutherland collaborates with Leo Judeh for Chickpea, a hummus-centric vegetarian stand.

Perhaps most interesting the lineup is Betty & Earl’s a biscuit spot that will hopefully fill the gaping hole in great biscuit restaurants currently plaguing the Twin Cities. The stand comes from a surprising place: television and radio host Jason Matheson. Apparently, his grandfather Ed’s biscuit recipe is something he’s held close to Matheson’s heart since Ed’s passing. Smartly partnering with experienced pastry chef Adrian Odom to pull off the prospect of a sweet and savory biscuit serving eatery.

More restaurants are still expected to be announced.

The past iteration of the space, Revolution Hall, was overseen by one east-coast based company. Stands ranged from tacos to sushi made by a robot and a bakery from celebrity pastry chef Zac Young. Revolution Hall burst onto the scene, but quickly fizzled with inconsistent service and middling food quality. Revolution Hall closed within its first year in July of this year.
